
These balls are great for parties as finger food. You can prepare them ahead of time and then heat them up just before serving.
I stole this recipe from my friend Korn who is a fabulous cook...thanks Korn!
what you need
1kg chicken mince
1 cup bread crumbs
1 cup finely chopped fresh coriander
4 springs onions finely sliced
3 tbsp thai sweet chili sauce
1 tbsp thai fish sauce
1 tbs chinese soy sauce
1/2 cup chopped peanuts
1 tsp ground coriander seeds
salt and pepper (just a bit)
what to do
1) combine all ingredients in a bowl and mix well with hands
2) allow to stand for around 30 min for flavours to infuse
3) roll mince mixture into small bite size balls
4) shallow fry in peanut or vege oil till brown
5) bake in preheated oven at 180 degree Celsius for 5-10 minutes
6) serve with sweet chili sauce on the tside
tip: if you are having a party you can fry the balls earlier in the day, allow them to cool and store in the fridge till ready to serve. Then heat them on a tray in the oven for 15 min till they are heated through.

These are the best Thai chicken meatballs I have ever tasted. We served them up at our baby shower/engagement come surprise wedding in June 07 and still to this day people talk about them.
